This soup is delicate certainly! There is delicate onion in it! But the Finnish summer soup as if would be cheaper!

Mmmm once i have done it with chives, if you can eat that... or with leaks?
But the fresh summer onions are definately the best....
I find the Estonian people a little bit strange. Their name ends so: ...-kass
They do not eat the onion, and they are able to ride a bicycle until 33 days. clown

Chocolate Dream Swiss Roll

Post by caysa on Sun Jul 05, 2009 4:11 pm

Start with the FILLING
2 dl whipping cream
200 gr dark chocolate

Heat the cream (do not boil!!) in a saucepan.
Take the pan off the heat and add the chocolate in small pieces.
Mix until all choclate has melted. Put the saucepan into cold water to make the chocolate mix cool.
Then mix with electric mixer until you have a fluffy chocolate foam (yummy )

Now turn the oven on to 225 C.
Prepare an oven tray (ca 30cm x 40 cm) - line it with baking paper.

Then the BATTER

4 eggs
1,5 dl sugar
1 dl potato flour (or Maizena)
1 tablespoons plain flour
2 tablespoons cocoa powder (the real dark powder)
1 tsp baking powder

and some apricot jam to spread on the cake (1½ - 2 dl)

Mix the eggs and the sugar with electric mixer until it is thick an pale. (hmm mine never gets pale as our eggs have almost orange yolk lol! )
In another bowl mix the dry ingerdients and add into the egg-sugar mixture through a strainer. Carefully mix with a spoon or a dough scraper to keep as much air inside the batter (do not use the elctric mixer here!!!)
Spread the batter evenly onto the baking paper and bake for 7-8 minutes in the middle of the oven.
Put another clean baking paper onto a tea towel. take the cake out from the oven and sprinkle lightly with sugar all over the top.
Now turn the cake upside down onto the clean baking paper. Don't be afraid, it will not fall off!!
Then carefully and slowly take off the old baking paper and leave the cake to cool.
Then spread a thin layer of apricot jam on the cake and spread the chocolat mousse on top as evenly as you can.
With the help of the baking paper and the tea towel roll the cake. Try to keep the mousse inside:)
Use the tea towel to make a nice firm parcel and transfer it all into the fridge to settle and cool. At least 1 hour....
Take it out and sprinkle cocoa powder on top with a tea sifter and if you havent eaten all chocolate that you had you can put some chocolate shaving on too.
Then cut into slices and serve!!
Everyone will LOVE YOU!!!!!

As far as we have seen frpm Ophy pictures, you have grown very well . Now you do not need to grow any bigger so you can have some nice cakes too!! And remember, the cakes are all vegetarian. I am sure that you lovely wife would be happy to find a choclate swiss roll on the table when she comes home - together with a nice cup of coffee and kiss from her dear husband too
