CAYSA'S WABBIT STEW
This is what you need for the WABBIT stew
Rabbit meat (hare in this case) cut in pieces, no bones.
Essential ingredient is the red wine. I used a HUNGARIAN red wine
The vegatables are onions (you take what you have), garlic, carrot and celery stalks. Also a can of tomato pulp is needed.
For seasoning salt and peppar + juniper berries, thyme, rosemary and bayleaf

Start by throwing the cat out
Fry the meat quickly in a hot pan. I use butter and oil. Don't put too much meat in at one time.
Put the browned meat into a oven proof dish.
Then lower the heat a bit and let the vegetables get translucent and hot in the pan too.

While the vegetables are in the pan you can crush the juniper berries and the herbs to get a better taste.
Add the vegetables and salt and peppar + spices into the dish.
"Wash" the frying pan with the red wine - yes - all of it
In goes the wine and the tomato pulp.
Let it start cooking on the stove - then move to the oven. Put a lid on. Moderate heat (175 C). Mix every now and then. I keep mine in until the meat almost falls apart....
Serve with cooked or mashed potatoes.
